Pear Pomegranate Pecan Salad with Honey Yogurt Dressing

I love to create healthy meals that also taste delicious. As a full-time elementary school teacher, I am always looking for easy and affordable options to take for lunch. The Bentgo Salad lunch box has made my lunches so much more fun! I assemble the ingredients the night before or morning of, then take the container with me to work and keep it in the fridge until lunch time. Then I can easily mix all the ingredients together and have a delicious fresh salad.

There are so many options and combinations for meals I can pack in Bentgo Salad, but I have to share with you one of my favorites for the winter/spring seasons. It combines leafy greens and sweet fruit with crunchy nuts and some chicken for protein. Mix that with creamy feta cheese and yogurt dressing, and you've got a nutrient-packed salad that tastes great and looks fancy.

Ingredients:

2-3 cups leafy greens

1/2 fresh pear, sliced

2/3 cup cooked cubed or shredded chicken or turkey

1/4 cup pomegranate arils

1/4 cup feta cheese

1/3 cup roasted pecans

Assemble all the ingredients in Bentgo Salad.

Tip: Use lemon juice on the pear slices to keep them from browning.

Dressing:

1/2 cup Greek yogurt

1 tbsp honey

2 tsp lemon juice

A few grinds of lemon pepper seasoning

1 tbsp milk

Whisk all ingredients together; add milk last to get the dressing to your desired consistency. Add what you need for lunch to Bentgo Salad's leak-proof sauce container and store the rest in your refrigerator for later.
