Egg Salad Wraps Your Kids Will Love

My kids love egg salad. I make a huge batch on Sunday and store it in an air-tight container in the fridge. An easy way for me to make sure they get their veggies in is to wrap the egg salad. (I used rainbow chard for this wrap, but lettuce works too.)
What's in the Bentgo
- Egg Salad Wraps
- Avocado "Rose" with Tomatoes
- Fruit Skewers,
- Dried Cranberries
- Granola Ball
Egg Salad Recipe
Ingredients:
4 hard-boiled eggs
¼ cup mayo
1 tsp Dijon mustard
Spoonful of capers, pepper
Directions:
Mix all together and enjoy!
To roll into rainbow chard or lettuce simply spread egg salad onto chard, then roll up. Slice in half.
Avocado Rose Recipe
Directions:
Slice avocado in half. Remove skin and thinly slice horizontally. Spread it out and then roll it up. My kids enjoy eating tomatoes with their avocado.
