Recipes for a Quick and Healthy Kids Lunch

She finds making nutritious foods for a somewhat picky toddler to enjoy can be a struggle. Here's how she uses organization and preparations to make packing a nutritious lunch easier.
Being a full time working mom, I don't like to waste time in the kitchen with fussy meals. With that being said, I don't want to pack my son's lunchbox full of junk. I like to know that he is getting somewhat of a balanced meal and that his belly will be full for hours.

This lunch has mini oat pancakes, egg salad, orange slices, walnuts, and cucumber slices. Here's how I make it!
Egg Salad
1 hard boiled egg, mashed
1 tsp finely chopped onion
1 tsp Greek Yogurt
1/2 tsp yellow mustard
Salt/pepper
- Place ingredients in a mixing bowl and stir until well combined.
Mini Oat Pancakes
2/3 cups Oat flour
1 tbsp honey
1 banana, mashed
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
2 tbsp unsweetened almond milk
Dash of salt
2 eggs
- Place ingredients in a mixing bowl. Stir until well combined.
- Heat 1 tbsp butter on griddle over medium/high heat. Use teaspoon to spoon pancake batter onto griddle.
- Cook on each side for 2-3 minutes or until lightly browned.
**Time saving tip: Store cooked pancakes in the freezer for even quicker lunch box assembly.
