As we start off the new year, I think we all have one similar goal in mind.. to live a healthier lifestyle. Choosing to adopt a healthier lifestyle means making different, better choices. Most of these choices are related to what we eat (or don't eat) and how often we exercise. It's easy to set a goal for yourself at the beginning of the year in high hopes of sticking to it all year long. I think we all know how hard that can be. So I challenge you in 2017 to make solid goals for yourself and stick to them all the way through!

If one of your 2017 goals involves eating healthier, I'm here to tell you that it's not as hard as it may seem. You might be thinking that in order to eat healthier you have to give up delicious food. That is not the case my friends. This dish is here to prove that. I was actually surprised myself with how good this one turned out. You would think a dish with just ground turkey, sweet potatoes and kale would taste pretty bland but it is far from that. I'm convinced that the rosemary is to thank for the delicious depth of flavor.



I also love this dish because it's one you can make a big batch of Sunday evening and use it for lunches the rest of the week. I packed it up in our Bentgo lunch boxes along with some fresh fruit for quick take-and-go lunches for the week! It tastes just as good reheated as it does right off the skillet. It's packed full of protein and vitamins and if you're someone who counts your macros (I am not) then it's also one that would fit right in with the proportionate amount of carbs, protein and vegetables all in one dish! Oh, I didn't mention the VERY best part. It only uses up one dish. If you're like me, that's music to your ears.

When I served this for my husband and I for dinner, I decided last minute to add an over-easy fried egg on top with each of our servings. I definitely recommend you do that, it adds a lot to the dish, not to mention more protein! We also topped with sliced avocado because well, everything is better with avocado.

Ground Turkey, Kale and Sweet Potato Skillet

2 tablespoons olive oil
2 cloves garlic, minced
1/2 yellow onion, finely chopped
1 lb ground turkey
2 small sweet potatoes, peeled and diced
2 tablespoons fresh rosemary, chopped
1/2 teaspoon crushed red pepper
1 teaspoon salt
1 teaspoon pepper
4 cups kale, stems removed and broken into small pieces

1. Heat oil in skillet over medium heat. Add in garlic and onion and sauté for 2-3 minutes.
2. Add the turkey to the skillet and continue to cook and break apart the meat. Cook until meat is done, about 10 minutes.
3. Add in the sweet potato, 1 tablespoon of the rosemary, crushed red pepper and the salt and pepper.
4. Cover skillet with a lid and cook on medium-low heat for 10-15 minutes or until potatoes soften.
5. Add in the kale and cook until kale softens, should be a few minutes.
6. Lastly, top with the remaining rosemary.
